The Cacciannanze is the famous unrefined focaccia, or flat bread, from Ascoli Piceno. Pizza was used to be baked before bread to make sure the oven was hot enough: hence the term “cacciannanze” from “caccia innanzi”, meaning “take out earlier”.

It is usually eaten hot with row ham and a glass of wine.
